Peaks and Pints Pilot Program: Bellingham Hefeweizens On the Fly

Share

The hefeweizen has been around a long time. Some beer historians say it was brewed as far back as the 11th century. In German, hefeweizen (pronounced HEH-feh-vite-zen) means yeast wheat, so called because the beer is traditionally unfiltered, leaving the tiny particles of yeast sediment to turn the golden beer cloudy and turbid. It may be this suggestion of solidity that leads Germans to occasionally refer to hefeweizen as bottled bread. The beer style can have a variety of flavors including clove, vanilla, apple, banana, even bubblegum. They have low amounts of hoppiness. Hefeweizens are made with more than 50

Peaks and Pints Monday Cider Flight: Apple Varietals

Share

Variety is the spice of life. Variety is also a defining characteristic in hard cider. Like wine grapes, cider apples have the tannin, acid, sugar and aromatic precursors necessary to make a complex fermented beverage. Unlike wine grapes, these characteristics are rarely all contained within one variety. Therefore, most ciders are blends. Cider makers often blend inedible bitter-sharp and bittersweet apple varieties with crossover apples to create their signature house styles. Others are experimenting with single varietals, using just one type of apple to create ciders with a distinct flavor profile. Peaks & Pints enjoys ciders made with cider specific

Peaks and Pints Pilot Program: Beer Run Day On The Fly

Share

One of the most crucial activities on the day before Independence Day is the “beer run.” That’s when people make last-minute beer runs to stock up for Fourth of July celebrations. In fact, the week leading up to today is among the largest sales weeks for craft beer each year. “For small and independent breweries, the Fourth of July period is like Black Friday,” says Bart Watson, chief economist for the Brewers Association, in a news release. “It’s easily one of the biggest beer holidays for to-go sales, and is a huge driver of on-premise sales as well.” It’s only

Peaks and Pints Pilot Program: Gose On The Fly

Share

You’ve heard of gose. It’s German, a sour beer. Pronounced “go-zuh,” like the thing that wrecked New York in Ghostbusters. Reported to be between 200 and 1,000 years old, it’s sour and salty, a low-ABV session beer, which means it won’t get you sauced. The gose style is a wheat beer that balances a sour twang from lactic acid-producing bacteria, a distinct salinity and a subtle floral spice from added coriander. It’s made with a souring process using a natural bacteria like what you’d find in yogurt. This provides a natural acidity; a really nice tartness that helps balance. It has a

Peaks and Pints Pilot Program: West of Seattle On The Fly

Share

Much like Tacoma, people pushed out by stratospheric home prices in Seattle neighborhoods have snapped up houses in White Center, pushing up rents and making new mortgages harder to afford. Twenty years ago, people might not have considered the unincorporated King County neighborhood on the southwest edge of Seattle. But some 18,000 people who call White Center home did — either living through the neighborhood’s “Rat City” days, or recently moved there after the rough edges of White Center’s commercial core have been recently smoothed out by new businesses in the area’s historic business district. Today, the area’s hard drinking

Peaks and Pints Pilot Program: Down Under On The Fly

Share

It will be 61 degrees and raining in Sydney, Australia, today. Sounds quite lovely. Let’s pretend we’re Down Under today in the only way possible — drinking beers made with Southern Hemisphere hop varieties. American craft breweries began seriously researching these hops in 2016 as many hops varieties grown in the United States are becoming more expensive and more difficult to get as the craft-brewing industry expands and more consumers embrace craft beer. The Southern Hemisphere brings wild, tropical and overwhelming bright, fruity characteristics from such hops as Nelson Sauvin, Galaxy, Ella, Vic Secret, Enigma, Motueka, Moutere, Wai-iti, Nectaron, Rakau,

Peaks and Pints Monday Cider Flight: Tieton

In 2008, Craig Campbell and his wife, Sharon, began experimenting with making cider from dessert apples grown in their 400-acre commercial fruit orchards. Today, they blend American heritage, English, and French cider varietals with dessert apples to capture the best of what each variety brings to the bottle: sweetness, acidity, tannin and aroma. They call their cidery, Tieton Cider Works. We call today’s to-go cider flight, Peaks and Pints Monday Cider Flight: Tieton. In 2010, Daniel Love opened Mother Earth Brewing Co. in Vista, California, just north of San Diego. After an expansion in Vista, he then set his sights on a larger expansion that saw the opening of its second location, one a fair distance away from San Diego County to Nampa, Idaho, a suburb of Boise. Quickly, it became Idaho’s largest brewery. In fact, Mother Earth has enjoyed double digit growth every year since it opened. For the past few years, Mother Earth’s best-selling beer in San Diego has been its Cali Creamin’ Madagascar vanilla cream ale, and it’s Valencia orange

Peaks and Pints Pilot Program: Saison To The Rescue

Share

If you’re seeking a beer to take the edge off our scorching hot condition, consider the saison. After all, saison (SAY-zohn) is the French word for season — specifically the summer season. The beer style, also known as farmhouse ales, dominated the summer farmlands of the French-speaking Wallonia region of southern Belgium in the 18th century. The refreshing, lower in alcohol ale provided refreshment to thirsty farm workers on hot days, thus the farmhouse connection. Because the style emerged as a seasonal beer, often brewed in the winter and made without temperature controls, the original characteristics of the style were

Peaks and Pints Pilot Program: Terpenes On The Fly

Share

Terpenes are naturally occurring hydrocarbon chains found in all organisms. These hydrocarbons are made up of building blocks of five carbon chains known as isoprenes (isoterpenes, C5H8). Terpenes are important in brewing for their role in hops, specifically, but not isolated to, its presence in hop essential oils. Throughout the brewing process many of the natural terpenes that come from the grain, hops, and spices are lost. Terpenes are sensitive compounds and when exposed to high temperatures (such as those that occur when boiling wort) the more volatile ones such as myrcene and beta-caryophyllene are damaged and lost. The loss

Peaks and Pints Pilot Program: Tripel On the Fly

Though strong Belgian pale ales have existed for centuries, the “tripel” name wasn’t used until the Trappists monks at Westmalle Abbey changed the name of what they’d call “superbier,” their heaviest pale ale, in 1956. The Flemish Dutch word for triple, tripel suggests three times malt and strength. Much of tripel’s mystique comes from the innocent deep golden color, soft maltiness and customary, intriguing yeast stamp. That is followed by a sucker punch in the range of 8 to 9.5 percent ABV, a combination that offers culinary-quality complexity rivaling any darker brew. The burnished golden color, sometimes glinting of orange,

It’s a chocolate that includes sugar, which provides a shortcut for bakers. Anyway, it’s one of our favorite cakes with its chocolaty layers slathered in the coconut pecan frosting.
