Peaks and Pints Pilot Program: The Lost Abbey On the Fly

Share

The Lost Abbey Brewing Company is a brewery in San Marcos, run by Director of Brewery Operations Tomme Arthur. The Lost Abbey specializes in producing Belgian-inspired beers, barrel-aged beers and sours. The Lost Abbey, Port Brewing Company and The Hop Concept beers all come from the brewhouse within The Lost Abbey. It can be a bit confusing when referring to three different breweries that are technically located under the same roof, but there’s a reason why it’s done this way. The beers that come from these three brands allow the brewery to experiment in different ways without confusing or overloading

You fancy, Firestone Walker XXV Anniversary Ale! Fancy Pants Sunday: Firestone Walker XXV Anniversary Ale Founded in 1996, Adam Firestone, along with his brother-in-law David Walker, launched Firestone Walker Brewing Company quite humbly, inside a nondescript shed on the family’s Santa Ynez Valley vineyard. This year, the California Central Coast brewery celebrates their 25th anniversary the same way they celebrated past anniversaries by releasing an Anniversary Ale. The two founders and their brewmaster, Matt Brynildson, managed to stay the course during the pandemic and continue the annual rite — the creation of XXV Anniversary Ale, blended

You’ve just finished a pairing of Peaks & Pints’ flagship Roastmary sandwich of roast beef, smoked Gouda, red onion, and rosemary mayonnaise on rye paired with AleSmith’s Nut Brown Ale, and you’re considering desserts. You can’t wait to revisit Peaks’ chocolate chip cookie. The bartender approaches your table. Instead of the cookie you’re served a tulip glass full of sweet tart liquid. “What’s this?” you inquired through your protective mask. “It’s a pastry sour,” explains the bartender. Who couples Brettanomyces, Lactobacillus, or Pediococcus with a boysenberry pie? Increasingly, the answer to that is, “many brewers” — from Mason Ale Works,

Peaks and Pints Pilot Program: Hop Harvest On the Fly

Fresh hop season is a perk you get for living in the Pacific Northwest, with farm-fresh, bright-green hops throwing off beautifully idiosyncratic farm-y notes in beer made just a car ride from where the hops are grown. It’s more than just another feel-good “buy local” movement — with the yearly harvest comes a torrent of fresh-hop beers made from hops are at their peak of freshness, bursting with aroma from rhizome to rhizome. Why the time-sensitive frenzy? For something so associated with brash bitterness, hops are surprisingly delicate — breaking down almost as soon as they’re harvested. The Northwest leads

They opened their doors for business on January 22, 1994. In their first 20 years, Left Hand merged with Tabernash Brewing from Denver, founded a distribution company, and released Milk Stout Nitro — founding America’s original nitro bottles, and even survived a 500-year flood. Peaks and Pints Pilot Program: Freshest Fresh Hops On the Fly

Fresh hops are brewed during a very brief window of the year when hops are being harvested. It’s the one time brewers can use hops directly after they’re picked from the vine and before they are processed in any way; normally hops are dried and then pelletized. During fresh hop season, the hop cones go straight from the vine to the beer in a matter of hours. The result is a wonderfully aromatic, fresh-tasting creation. But fresh hop beer isn’t easy being green. The brewhouse fermenter sits empty waiting for the phone call. It’s an eternity if there’s only three

Peaks and Pints Monday Cider Flight: Autumn

Share

Peaks and Pints argues that autumn is a super season, at least when it comes to food and drink. What we eat and drink this time of year evokes memories more easily than what we consume in other seasons. This is the time of year we dust off crockpots and Dutch ovens for soups and stews, filled — at least right now — with the remaining harvests of our local farms. This is when we flock to orchards for fresh-picked apples, and when we scoop out globs of pumpkin seeds for roasting. We drop cinnamon sticks in hot cider, and

The Ringsrud family has grown apples, pears, cherries, and grapes in the Wenatchee Valley since the 1940s. He met his wife, Norma, while working in the orchard, and they raised their children on a small plot in Cashmere, eventually planting their main orchard in East Wenatchee in the 1960s. Field workers pace between rows of bines suspended on ropes, pulling off a few of the hop flowers — bright green cones whose aroma is an instant reminder that another round of brewers will arrive with empty sacks the next day. Hops are one of Washington’s most prominent crops, their farmers powering the global brewing industry by growing almost 75 percent of the world’s hop acreage in the state, almost all of which is in the Yakima Valley. It thus makes sense that

Peaks and Pints Pilot Program: Quad vs. Quad

Quads. It’s not only what you work on Leg Day or where you go streaking, but it’s also the term used to describe the behemoth variation of beer styles: Belgian-style quadrupel and quadruple IPA. We wouldn’t fault you for thinking these two beer styles were similar. As with so many terms in brewing, there appears to be a logical connection where there’s not. But quadrupels and quadruple IPAs have almost nothing in common, other than that they’re both beer. The Belgian quadrupel is the strongest in a series of Trappist styles, often more than 10 percent ABV. It’s a dark

Peaks and Pints Pilot Program: Cashmere On the Fly

The Cashmere hop was released by the University of Washington in 2013 as a daughter of Cascade and Northern Brewer. Aptly named, Cashmere adds a smooth bitterness when added early in the brewing process. More bitter than Cascade, Cashmere gets its elevated bitterness from Northern Brewer side of its lineage. Due to its decent oil content, Cashmere makes a great dual-purpose hop, which is why you’ll find it in many types of beers from IPAs and pale ales to sours and saisons. Cashmere single-handedly transforms a simple saison or sour into quite the interesting beer. And in an IPA or pale ale, its exotic,

Today, their two-acre experiment expanded into Cider View, a 30-acre “high-density” cider orchard.
