Brewers use limes in several creative ways to impart tart, citrusy, and zesty flavors to beer. Lime zest, when added near the end of the boil or in the whirlpool, sometimes during fermentation (“dry zesting”), can produce a bright citrus aroma and a hint of bitterness from the oils. Lime juice added after fermentation helps prevent sugar fermentation and off-flavors, contributing tart acidity and a fresh lime flavor. Lime puree, added during secondary fermentation or after primary fermentation is complete, adds real fruit depth, used primarily in fruited ales or kettle sours. Lime extract and flavorings are often added in post-fermentation, especially in commercial or large-scale brewing. Once life returns to normal, Duncan Susag, brother Alex Susag, and cousin John Samuelson will open Sig Brewing on the edge of Tacoma’s Historic Brewery District, along Tacoma Avenue South in the building formerly occupied by Duncan’s concrete design firm, Studio Make. During the construction of the beautiful concrete bar and other taproom artistry, head brewer Jeff Stokes, a former head brewer at Three Magnets Brewing in Olympia, has been teasing the South Sound with his talent. Stokes’ Communication Is Key Lime drinks like a light-bodied fruit beer. Still, it reminds me of key lime pie. Sabro hops coax out flavors of lime and coconut, but Stokes stoked the flavor more with a massive amount of key lime juice built upon Nabisco graham crackers and toasted coconut.

Evil Twin This Deli Needs A Bigger Double Kiwi Lime Coconut Muffin Lassi Gose – Marshmallow Treatment

Collaborating with fellow Scandinavian brewery Omnipollo, Evil Twin Brewing began with a tangy sour base before adding a pinch of sea salt. Then they layered the beer with kiwi, coconut, and lime and rounded it all out with marshmallow and milk sugar. Expect ripe kiwi, cooling colada cream, marshmallow, zippy citrus, and a touch of gose minerality on the finish.
