In December 2021, after 300 batches of homebrew and countless building egress drawings, Nick Ladd and Jessie Quan, husband and wife, opened Ladd & Lass Brewing in Seattle’s U-District. Housed in the former Floating Bridge Brewery spot on 45th Street near Interstate 5, which was also the former Rainbow Tavern where the Ramones and Soundgarden rocked the kids, the former architects opened with a pile of beer recipes and design chops. With T-shirts, albums, and newspaper articles from the glory days of Rainbow Tavern donning the walls, Ladd & Lass brew the full spectrum of beer styles — from lagers to hoppy libations to mixed-fermentation beers and everything in between. Today, Peaks & Pints presents a flight of Ladd & Lass beers — a flight called Peaks & Pints Beer Flight: Ladd & Lass.

Ladd & Lass Hallowed Grounds

5% ABV

Hallowed Grounds is a Munich-style dunkel lager created through a collaboration between Ladd & Lass Brewing, Outer Dark Coffee Co. in Tacoma, and The Beer Junction in Seattle. This smooth, coffee-forward lager is double-infused with two distinct Outer Dark roasts: the Form & Void espresso blend during the hot side of brewing, and El Puente, a natural-process Colombian coffee, added during lagering. The result is an intensely aromatic beer with notes of cacao, dried fig, and subtle spice layered over a nutty, toasty malt base. Designed to evoke the feel of an afternoon iced coffee, it’s both crushable and flavorful.

Ladd & Lass Trampled By Koalas

5.1% ABV

This extra pale ale is a light and bright experience. With a striking, pristine golden hue and a punchy dose of some of Ladd & Lass’ favorite Southern Hemisphere hops, expect notes of lime, pineapple, and guava delicately intertwined with a crisp malt body.

Ladd & Lass Rainbow Fabulous

6.4% ABFV

Rainbow Fabulous is a hazy IPA brewed in celebration of Pride and inspired by the Fabulous Rainbow Tavern, a historic gay bar that once occupied the same site from 1973 to 1986. This juicy, vibrant beer boasts a smooth, creamy mouthfeel, thanks to a malt bill comprising flaked oats, malted oats, pilsner malt, and white wheat. Its hop profile includes Cryo Citra, Mosaic, Centennial, Cryo Krush, and HBC 1019, delivering layered aromas and flavors of pineapple, grapefruit, white grape, and citrus. A portion of proceeds supports Lambert House, an LGBTQ+ youth organization, making this beer both a nod to Seattle’s queer history and a meaningful contribution to its future.

Ladd & Lass Pitchers & Catchers

6.8% ABV

This West Coast IPA features an all-star roster of big leaguers that includes Cryo Simcoe, Citra, and Southern Hemisphere phenom, Peacharine. This grand slam of a fruit-forward IPA is balanced by a dry body and a hint of bready malt layers, which include Cryo Simcoe, Citra, and the Southern Hemisphere phenom, Cryo Motueka. Ladd & Lass Barrel-aged Year Two

13% ABV

Ladd & Lass marked their second year as a commercial brewery with Barrel-aged Year 2, a blend of deliciously rich barleywine aged 12 months in Woodinville bourbon casks and other select barrel-aged beer from deep in our cellar. The result is a concoction unmatched in layered complexity, featuring notes of rich toffee, beguiling dried dark fruit, sweet vanilla, toasty oak, and an undercurrent of nutty roast.
