Case in point: today’s revelation from Finnriver Farm & Cidery—Black Oak, a dark-fruited fever dream of a cider. It begins with bright, high-acid heirloom apples and gets alchemical fast, blending in fresh-pressed organic black currant wine from Agnew’s Tahlequah Farms and Winthrop’s Methow Wild Fruits, then aging the mix in American oak brandy barrels for nine months—because time, like fruit, is sacred when left to ferment properly. The result? Tart, sultry, vinous, complex—like sipping forest poetry in a velvet smoking jacket. Tap it. Bottle it. Worship it.
