SATURDAY, FEB. 12 2022: “I want brie! I want Beyoncé!” screamed Peaks & Pints bartender Nicole as she entered the building this morning. Halfway with their Brie Brie King sandwich special the Peaks Kitchen switched it up and gives us Brieoncé — a sandwich special that pairs the delectable cheese with chicken, pesto, mayo, and tomato on sourdough.

PAIRING: Monkless Belgian Ales Capitulation

Pesto sauce is made with strong herbs that are best suited with a Belgian ale. The herbs and spices of a Belgian ale match the aroma of pesto. Creamy and buttery brie needs a beer to cut through it such as a Belgian tripel. Therefore, we’re pairing today’s special Monkless’ Capitulation — the Bend, Oregon, brewery’s The Trinity tripel dry hopped add a blast of flowery, citrusy hop aroma.

BTW, Nicole has loaded the jukebox with Beyoncé for her afternoon shift.

We’re open 11 a.m. to 10 p.m. Sunday-Thursday, 11 a.m. to 10 p.m. Friday and Saturday, but we hope to return to “before times” hours when we’re able to seat at full capacity.
