Born in Tijuana, Mexico, and raised in Southern California, Sam Zermeño has been brewing professionally since 2016, two years after he and his brother homebrewed in their driveway. He started as an assistant brewer at Black Market Brewing in Temecula, California. he was the R&D brewer at Great Notion for nearly three years, all during the Pandemic, and brewed for 10 months at Living Haüs Beer before opening Brujos Brewing on March 2 in the former Hammer & Stitch Brewing space. This weekend, Peaks & Pints picked up beer from Brujos’ all-black taproom with a mural of a skull bleeding gold from its gaping jaws. With pounding metal music swirling about the tall, churchlike ceiling with casts of lantern- and scythe-carrying ghouls looking down from above, we grabbed cases from the 2025 Oregon Beer Awards’ “Best New Brewery” for our Peaks & Pints Beer Flight: Brujos Brewing.

Brujos Cirice
4.8% ABV
“Cirice” is a song by the Swedish rock band Ghost, released on May 30, 2015, as the lead single from their third studio album, Meliora. The title “Cirice” is derived from Old English, meaning “church,” and is intentionally pronounced “sir-ees” to resemble a feminine name, adding layers of ambiguity to the song’s theme. Brujos’ version is a German-style pilsner brewed entirely with German hops and malts, naturally carbonated, unfiltered, and lagered extra cold for an extra long time.
Brujos Necromanteion
8% ABV
The Necromanteion was an ancient Greek temple dedicated to Hades and Persephone, underworld gods. The name means “Oracle of the Dead.” Brujos’ version is an imperial sour hazy IPA hopped with Citra and Mosaic. It’s re-fermented with peach and cara cara orange puree and treated with Madagascan vanilla beans and lactose for an orange creamsicle with a bitter finish.
Brujos Shiva Honey
9.99% ABV
Shiva Honey is a prominent figure within the modern Satanic movement, known as an artist, musician, organizer, and author. Brujos’ version is an imperial hazy IPA brewed with honey from the St. Helens region, hopped with Citra, Citra Cryo, and Galaxy for a lead hop punch, followed by honey for the fade.
Brujos Vendedor De Ilusiones
7% ABV
This clean, crisp triple dry-hopped West Coast IPA, a reunion with 2024 3-Way IPA partners Fort George Brewery and Ghost Town Brewing, is brewed with Chinook, Simcoe, Mosaic, Mosaic Cryo, Mosaic Dynaboost, and VGF Farms Amarillo for clarified dankness and light citrus.
Brujos TDH Populus
7.5% ABV
This hazy IPA that won silver at the 2025 Oregon Beer Awards is brewed with Citra, Mosaic, and Nelson hops featuring a triple dry hopping and all the “xtra satanic haze™️”.
