Bill Sysak is an ambassador for craft beer. He’s been around the industry for some 45 years, including a brand ambassador for Stone Brewing, an instructor at San Diego State University’s Business of Craft Beer Program, and a consultant for many brewery startups. In the fall 2017, along highway 78 through San Marcos, California, he opened the 15-barrel Wild Barrel Brewing with former Cascade Brewing master blender Pretson Weesner and Bill Sobieski, longtime homebrewer, and president emeritus of local home brewing club Society of Barley Engineers. They opened with dank IPAs, milk stouts, fruited Berliner weisses, and other styles while engineering an ambitious barrel and spontaneous-ale programs. Today, Peaks & Pints presents a to-go flight of Wild Barrel beers — a flight we’re calling Peaks and Pints Pilot Program: Wild Barrel Beer Flight.

Wild Barrel Vice Mixed Berries

5.6% ABV

Vice is a two-times GABF gold medal-winning series of Berliner weisses from Wild Barrel. This version comes soaked with luscious strawberries and tangy-tart blackberries with plenty of berry presence, a little bready undercurrent, and some funk on the nose. It as if swirls of fresh-picked strawberry juice and jammy blackberry’s subtle pucker exploded in our mouth.

Wild Barrel PB and Jam

8.5% ABV

What started out as a one-off keg for wild Barrel’s San Marcos Tasting room, PB and Jam eventually made it out of the taproom in the North County region of San Diego County. Wild Barrel grabbed their imperial pastry stout blackberry jam an added organic peanut butter for the sour version of a peanut butter and blackberry jam sandwich with the crusts cut off.

Wild Barrel Hipster Sweet Dreams

11% ABV

Hipster Sweet Dreams is an imperial pastry stout brewed with organic Indonesian coconut, Madagascar bourbon vanilla beans, and Belgian chocolate. It’s sweet with vanilla leading the flavor profile with notes of liquid baking chocolate and a touch of coconut.
