Peaks and Pints Pilot Program: Here Today Beer Flight

Oct. 8, 2022, Chris Elford, Dave Riddile, and head brewer Mario Cortes opened Here Today Brewery + Kitchen at 28th and Elliott Avenue in Seattle. Cortes spent time at Oskar Blues Brewery in Austin, New England’s Harpoon Brewery, Woods Beer & Wine Co. in the Bay Area, and Seattle’s Fair Isle Brewing before brewing balanced, lower-ABV beers and ancestral flavors of his Mexico upbringing at Here Today. Elford, the creator behind Navy Strength Tropical Bar and Tradewinds Tavern (formerly No Anchor) in Seattle’s Belltown neighborhood, helped create the modern design of the space complete with vintage booths and furniture from old skating rinks, as well as cocktails and food, a menu planned by consulting chef Josh Jones of Austin’s sustainable butchery Salt and Time and managed by Eamonn Monaghan of Sawyer, Ballard’s recently shuttered, James Beard-nominated restaurant. Marketing and operations director Riddile, or Texas Dave as he’s known, brings eight years of experience in beer marketing and as No Anchor’s general manager. Peaks & Pints is thrilled to be a part of Here Today’s first delivery to Tacoma. Therefore, we present a to-go flight of Here Today beers — a flight we’re calling Peaks and Pints Pilot Program: here Today Beer Flight.

Here Today Lazer Shades Citra

5.5% ABV

Here Today’s Lazer Shades modern hazy pale ale series is brewed with 2-row barley and flaked oats in the mash, Warrior hops for bitterness, and then a single hop in the whirlpool and dry hop for aroma and flavor. Their Citra version offers tons of pithy citrus, tropical fruit, and a modestly bitter finish.

Here Today Lazer Shades Mosaic

6% ABV

Here Today’s Lazer Shades modern hazy pale ale series is brewed with 2-row barley and flaked oats in the mash, Warrior hops for bitterness, and then a single hop in the whirlpool and dry hop for aroma and flavor. Their Mosaic version cryo Mosaic hops, as well as Mosaic hops in the dry hop for floral, tropical, fruity, and earthy characteristics.

Here Today Infinite Crystal

7.4% ABV

This modern IPA is brewed with German Pilsner malt and toasted brown rice with Warrior, Southern Cross and Hallertau Blanc in the whirlpool and dry hopped with HBC 586, an experimental hop variety from the Hop Breeding Company that’s described as “a large medley of fruit flavors … mango, guava, lychee, citrus, with slight sulfur and herbal notes.” Infinite Crystal grabs the mango and citrus traits plus some stone fruit. Peaks & Pints has Infinite Crystal on tap for pints and Campfire Crowler fills.

Here Today Wolves Teeth

8.5% ABV

Adult wolves have 42 teeth in total: 12 incisors, four canines, 16 premolars, and ten molars. Here Today has two Wolves Teeth, so far — this imperial stout and a maple version Peaks & Pints hopes to carry one day. This Teeth has a light body with fig and pomegranate up front, and a dry, bitter chocolate finish.
