We are heartbroken to have to say that we have come to the thoughtful and difficult decision to permanently close The Swiss Restaurant & Pub. There are several factors that have brought us to this decision and it has come with many, many sleepless nights but we know that this is the right decision given the current and unforeseeable future of our industry. The love and support that we have had from the community throughout the years is unsurpassed and without question singularly exceptional. We started from nothing, three people who loved this town and industry. The partnership changed over the years but the commitment and love stayed the same and I am proud to be the last original owner of The Swiss. I had staff that stayed by my side for 20+ years. I am thankful for them and for the rest of my Swiss Family. You came, you shared your joys and tears with us, we are forever grateful. The Swiss is more than just four rooms, it is a living, breathing entity that has touched and been touched by so many people. People found their true loves here, their life long friends, celebrated birthdays, babies, marriages, retirements, art, food and music, everything that makes life worth living. You all have given us a beautiful, unforgettable life, we are grateful beyond measure. We wish peace, happiness, health and love to each and every one of you. Thank you for an amazing 27 years. We have come to the incredibly difficult decision to permanently close Pacific Grill restaurant and Pacific Grill Catering. It is difficult to type these words — such a shock after being open 15 successful years. It’s like knowing you have to speak to someone you love who just lost a family member and wanting to carefully choose the *perfect* words. But sometimes words fail, and nothing sounds right. Yet it is impossible to move forward during this unforeseen pandemic. Know that this story is being played out across the country where 100,000 small businesses like ours will permanently close. It is difficult to imagine Tacoma without Pacific Grill. And even more difficult to have to tell all of our wonderful guests and professional staff. This is where Tacoma came to celebrate birthdays, business promotions, graduations, anniversaries, and to celebrate a life well-lived. This is also where foodies came to eat great food, wineries jockeyed to have their wines showcased, and food critics raved. And if you hired Pacific Grill Catering you were guaranteed a delicious professional event. Many times people would stop me on the street to say they would not have attended an event until they saw PG was catering it! We helped so many fundraisers over the years with great community partners raising millions of dollars for worthy causes. Opening Night 15 yrs ago I remember standing at the end of the bar and watching the faces as they came through the velvet drapes for the first time, how their faces lit up as they saw the beautiful room & light sculptures! That first night my “perch” was established and never changed. We received many awards for delicious food prepared in imaginative ways, celebrating the cuisines of the world, and beat even all Seattle restaurants consistently for Best Happy Hour in Western Washington! And we introduced our guests to new ingredients they had never heard of. Our guests also came to PG to see not only their good friends but also their favorite Servers, who brought their A-game every night coached by General Manager Christopher Johnson who was always everywhere at once. FRIDAY – Fresh hops come but once a year! Our favorite season is upon us, and this week we visited our friends at Coleman Farms (@colemanagriculture) to scoop a fresh harvest of whole cone Citra hops. We added them into an already dry hopped beer as a secondary fresh dry hop to craft a vibrant batch of Fresh Hop Ripe, a hazy IPA brewed exclusively with Citra hops. Get it on the app this Friday morning at 9 am, with pickup starting at noon @greatnotionnw and @greatnotionbeaverton. (7% abv) $20/4pack We are also whipping up a super limited batch of Fresh Hop Super Ripe (a hazy DIPA with Citra hops) that will be available for tap pours only at @greatnotionbeaverton and @greatnotionalberta, so book a table and enjoy a glass while the sunshine holds out!

??FRESH HOP?? . Are you ready for our favorite time of the year? We have been gearing up all season long for our first FRESH HOP BEER! . “Sticky Icky Greens” Fresh Hop STRATA IPA. . ABV 7.2%. . Utilizing freshly picked hops that went from the fields and into our brewhouse within HOURS. We sourced both wet Strata as well as freshly pelletized Strata (courtesy of Roy Farms) @royfarms_hops to make an IPA that cannot be missed. We created a treat of a fresh hop IPA…and this is only our first! . Touting immense notes of White Gummy Bears, overripe peach and pineapple, this is a pint of beer that will be gone before you know it. Currently this is a DRAFT ONLY release with a VERY LIMITED amount of draft only going across our bar. We have a LIMIT OF ONE (1) CROWLER PER PERSON and NO GROWLER FILLS. We appreciate your understanding as we want this beer to be enjoyed by many! But don’t fret….16oz cans of this beautifully Crafted IPA will be available later this month ?. . “Party On Gyle” Parti-Gyle Dark Mild . ABV 5.2% . Parti-Gyle? What even is that? A street fighter reference? Dark Mild? Yeah, we did something a little more esoteric. Alright, we brewed up a big ‘ol russian imperial but being the work harder not smarter kinda guys we are, we brewed a second beer off the spent grains…parti-gyle method! Imagine the thin border between brown, porter and a light russian imperial stout. Big flavors for those wanting a beer with multi-layered depth coffee roast, as well as a nice dry accent of luxurious bakers chocolate, a small bitterness as well as tiny salinity to make the malt pop. A beer crafted for dark beer drinkers and lighter drinkers alike, enjoy a “session-stout” and keep that party rocking. Thursday night in the backcountry. ⛺️✨? Backpacking is actually kind of a weird concept… you leave the comforts of home and the luxuries of modern civilization to walk for miles and miles, away from it all, with a tiny portable home and everything you need to survive as a human on your back. Instead of being at home comfortably seated on your couch after a delicious dinner, you’re sweaty and gross as you struggle to push through the last mile of the hike and find a not too rocky or too windy spot to set up your home for the night. It’s all rather inconvenient actually! ? But once you’ve put in the work, relaxed for a bit, watched a beautiful sunset, and looked up at the night sky as the stars come out, the inconvenience of it all is quickly outweighed by the experience of it all. There really isn’t anything quite like sleeping out under a sky full of stars ☺️✨⛺️?
