Wednesday, June 18, 2025: Peaks & Pints Kitchen Director and co-owner Robby Peterson created our Wednesday Sandwich Special featuring ham, smoky aioli, gorgonzola, provolone, red onion, pepperoncini, and tomato on French bread.

PAIRING: Trappistes Rochefort 6

Rochefort 6 pairs exceptionally well with this sandwich thanks to its complex, malty backbone and lively carbonation. The Belgian dubbel’s notes of toffee, dark fruit, and subtle spice complement the savory ham and smoky aioli, while also tempering the sharp, pungent bite of gorgonzola. Its medium body and effervescence lift the richness of the cheeses and aioli off the palate, keeping each bite feeling fresh. The beer’s slight sweetness balances the heat from the pepperoncini and the bite of raw red onion, while its yeasty, earthy undertones echo the rustic character of the sandwich’s French bread. Altogether, Rochefort 6 adds depth, contrast, and harmony to this bold and flavorful sandwich.
