Spring of 2020 was an extraordinarily strange time to open a brewery.

While much of the world was learning new vocabulary words, canceling plans, and wondering what happened to normal life, a family-owned brewpub quietly opened its doors in Tacoma’s Historic Brewery District. The timing was questionable. The ambition was not. Named for family patriarch Sig Susag and founded by cousins Duncan Susag, Alex Susag, and John Samuelson, Sig Brewing arrived with wood-fired pizza, a determination to make beer its own way, and an admirable willingness to ignore the increasingly crowded craft beer playbook.

Six years later, Sig feels less like a brewery trying to find its identity and more like one delighted to keep complicating it. Much of that personality flows through head brewer Jeff Stokes, whose curiosity and willingness to chase both precision and playfulness have helped shape the brewery’s voice. The beers don’t all point in the same direction, which is precisely the charm. One moment, there’s Communication Is Key Lime, the key lime pie sour that helped establish Sig’s delightfully eccentric side. Next, there’s a tiny, easy-drinking pilsner built for whenever the mood calls for refreshment, followed by a French-style pilsner with a touch of café-table elegance. Then come the hop-forward offerings: FOMOsaic, a full-throttle Mosaic obsession rendered in IPA form, and a sixth-anniversary collaboration with Georgetown Brewing that celebrates friendship, Northwest hops, and the enduring beauty of a properly bitter West Coast IPA.

It’s a snapshot of six years spent surviving, evolving, experimenting, and occasionally coloring well outside the lines. Through changing beer trends, shifting tastes, and one remarkably inconvenient opening year, Sig Brewing has remained committed to the idea that a neighborhood brewery can be many things at once: approachable and inventive, traditional and playful, serious about beer without ever taking itself too seriously.

Sig Brewing Communication Is Key Lime

6.7% ABV | Key Lime Pie Sour Ale

The first thing to arrive is a bright burst of key lime, sharp and sunny as a Florida postcard left on a Tacoma dashboard. Then the rest of the pie catches up. Graham cracker crust, creamy vanilla, and a touch of coconut unfold beneath the citrus, creating a dessert-inspired illusion that somehow remains lively rather than heavy. Tartness keeps everything in motion, cutting through the sweetness and inviting another sip before you’ve quite finished the last one. Few beers have become as closely associated with Sig Brewing as this one, a delightfully eccentric creation that proves sometimes the most memorable conversations begin when someone decides to color outside the lines.

Sig Brewing Pilsner

4.2% ABV | American Pilsner

Not every anniversary beer arrives carrying fireworks. Some show up with perfect timing, a clean shirt, and the quiet confidence that comes from knowing exactly what they are. Gentle notes of fresh-baked bread, grain sweetness, and a touch of honeyed toast drift across the palate before a crisp finish sweeps everything neatly back into place. The small addition of Vienna malt adds just enough depth while the corn keeps the body light on its feet and endlessly refreshing.

5.1% ABV | French-Style Pilsner

A breeze of fresh-baked bread and wildflower aromatics drifts from the glass before the first sip arrives crisp, dry, and elegantly composed. Notes of crackery malt and delicate herbal bitterness unfold with understated confidence, creating the sort of balance that feels effortless even though it clearly isn’t. There is a certain café-side charm to the whole experience, as if someone transported a sunny afternoon terrace from Lyon to Tacoma and poured it into a pilsner glass.

6.3% ABV | West Coast India Pale Ale

Mosaic takes center stage here and apparently refuses to share the spotlight. Mango, blueberry, dank citrus, peach-ring candy, and sticky pine resin come tumbling from the glass in vivid succession, each aroma somehow making the next seem even louder. A lean foundation of pilsner malt keeps the beer remarkably agile, allowing the hop character to stretch out and perform its full repertoire without becoming cumbersome. Somewhere between the first burst of tropical fruit and the final snap of resinous bitterness, Sig doesn’t have a fear of mussing out.

6.6% ABV | West Coast IPA

Six years feels like an excellent excuse to turn the hop dial a little farther than necessary, and this Georgetown Brewing collaboration happily embraces the idea. Comet, Chinook, Cascade CGX, and Centennial weave together bright layers of grapefruit zest, lemon peel, pine resin, and citrus blossom, creating an aroma that seems determined to arrive before the glass reaches the table. Midway through the sip, the two breweries reveal the beauty of classic West Coast structure: lean malt, firm bitterness, and enough balance to keep all that hop exuberance pointed in the same direction. Vibrant, expressive, and gloriously unapologetic, it drinks like a toast to six years of brewing, friendship, and the enduring magic of a well-built IPA.
