Bizarre Brewing, located in Seattle’s Magnolia neighborhood, was recognized as one of the best new breweries of 2023 by national outlets like VinePair, praised for its inventive low-alcohol beers and inviting beer-hall style taproom. Their focus on flavorful beers under 6 percent ABV—often brewed with alternative grains like spelt, buckwheat, and oats—sets them apart in the craft beer scene. In early October 2022, two Seattle beer scene veterans opened Bizarre Brewing to brew lower-alcohol-by-volume (ABV) beers in this bona fide community space. Derek Brown and Colette Boilini met working at Fremont Brewing in 2014. Boilini has also served at Holy Mountain and both Cloudburst locations. Brown was the first outside brewing hire at Holy Mountain, where he went on to lead their respected barrel-aged beer program. Inside their communal, industrial-chic taproom, which was formerly home to Urban Family Brewing, visitors will find long tables, rooftop seating, side-pull taps, board games, live music, and a family-friendly atmosphere that encourages lingering. Today, Peaks & Pints presents an in-house flight of Bizarre Brewing beer — a flight called Peaks & Pints Beer Flight: Bizarre.
Peaks & Pints Beer Flight: Bizarre
Bizarre Spirits Drifting
6.4% ABV
This fruited sour ale blends two vintages of barrel-fermented wild ales. The Peach 2022 component is a wheat-based ale brewed with coriander and fermented with Brettanomyces in a neutral white wine barrel. It was then aged on Suncrest peaches from Collins Family Orchards. The Apricot 2023 component is a blend of ales fermented in oak. This blend consists of stock brewed in August 2022 and February 2023 and was bottle-conditioned with a neutral wine yeast. The use of coriander and Brettanomyces provides a subtle spiciness and earthy funk. At the same time, the addition of Suncrest peaches and apricots introduces fruity sweetness and tartness, balanced by the depth and complexity of the oak fermentation.
Bizarre Black Nettle
4.5% ABV
This American-style stout is brewed with foraged stinging nettles, offering a uniquely herbal twist on a classic dark beer. Crafted with a complex malt bill including Pale English, Crystal, Pale Chocolate, caramelized oat, and triticale malts, it gains depth and smoothness, while Spalt Select hops lend a mild bitterness. The addition of steeped nettles in the kettle contributes subtle, earthy, herbal notes and a touch of spice, all fermented with the brewery’s house “Pub Ale” yeast and naturally carbonated. The result is a clean, balanced, and moderately sweet stout with hints of caramel, bittersweet chocolate, and soft spice.
Bizarre Shadow World
4.8% ABV
Shadow World is Bizarre’s decadent chocolate stout, mashed with English pale, caramel, and chocolate malts as well as Peruvian cacao nibs. It’s then hopped in the kettle with East Kent Golding before being fermented and naturally carbonated by one of its favorite English ale strains. It pours dark and rich, with aromas of roasted coffee, dark chocolate, and a subtle touch of licorice. On the palate, it delivers flavors of bittersweet chocolate, mocha, and roasted malt, accompanied by a mild earthiness and medium bitterness. Despite its depth, it remains clean and drinkable with a light to medium body and a crisp, dry finish.
Bizarre Four Corners
4.3% ABV
Four Corners lager creatively blends traditional brewing with bold, regional flavors. This beer is a green corn lager brewed with black lime, drawing inspiration from Oaxacan culinary traditions. The use of green corn imparts a subtle sweetness and earthy depth, while black lime adds a unique, tangy complexity. The result is a crisp, refreshing lager with a hint of corn sweetness and a subtle lime flavor.
Bizarre Dripping Earth
5% ABV
Dripping Earth pale ale is brewed with locally foraged fir tips and young fir branches. Bizarre starts with a base of German pilsner malt, English pale malt, and flaked oats, then hops it in the kettle with Centennial, McKenzie, and Simcoe. Next, they add a blend of freshly picked fir tips and young fir branches, then steep them before cooling to fermentation temperature. Lastly, Dripping Earth is fermented cool with their house Kölsch strain and dry-hopped with Mosaic, McKenzie, and Chinook LupoMAX for a light, pale ale with a resinous nose, crisp citrus notes, and subtle berry undertones.
