Peaks and Pints Beer Flight: Structures Brewing

Now that Structures Brewing has opened their second location, their beer is flowing back into the market. Founder James Alexander wanted to open a second location since opening in 2015 but kept his head down brewing Belgian farmhouse and mixed fermentation beers and hazy IPAs. During the pandemic Chuckanut and pFriem Family Brewers head brewer Bryan Cardwell and longtime friend of Structures has joined the ownership expanding their beer portfolio. In March 2023, Structures opened their second location in the former Chuckanut Brewery, which was taken down to the studs. It’s beautiful with two massive glass garage doors in that overlook the water, built a wrap-around patio, beautiful front door and added an entire draft system and bar to the back patio. Since another round of Structures beer landed at Peaks & Pints this week, we decided to feature another in-house flight of the Bellingham brewery’s delicious beer. Structures Junior

4% ABV

James Alexander and Ryan Miller took time away from their East Coast brewery jobs to hang in a remote cabin nestled in the Green Mountain National Forest. When they emerged Structures Brewing idea was a thing. They slowly made their way toward Bellingham through various brewery jobs across the country. Bellingham fit their easy-going lifestyle and need for community. In late 2015, Structures had structure and several beers on tap. Structures session IPA, Junior, is brewed with Amarillo and Simcoe for light, dry, floral, lemony, and a little herbal hop flavor.

Structures Zippy

5.2% ABV

Brewed in Belgian monasteries as far back as the 14th century, witbier is made from specific combinations of herbs and/or spices to balance the sweetness of the malt. Translating to “white beer” in English, witbier is typically brewed with a mix of pale barley malt, plus unmalted wheat and oats for a creamy mouthfeel. It is a spiced beer with coriander and citrus notes and a small amount of lactic acidity. Structures brewed their witbier Zippy with 50 pounds of zested and juiced lemons in addition to the traditional witbier spices. Expect malty flavors with cereal and a long nose of dried pear, plus a lush and sudsy mouthfeel.

Structures Subterranean

6.7% ABV

Subterranean is a beautiful and bright West Coast IPA loaded with Mosaic, Comet, and Chinook hops. It’s dank with a blueberry cotton candy kind of pop to it.

Structures In Circles

6.9% ABV

Structures added Idaho 7 hops in the whirlpool while making this hazy IPA, followed by a dry hopping of El Dorado, Citra, and Galaxy hops. It’s like liquid candy with tropical, papaya, and tangerine notes, plus a complex bitterness with a sweet yet dry finish.

Structures Flatlands IPA

7% ABV

Brewed with Structures’ favorite Pilsner malts and rolled oats, then heavily dry hopped with Columbus, Mosaic and Comet, Flatlands IPA has aromas of pineapple and passionfruit with a pillowy soft body, a firm yet subdued bitterness on the finish with some lingering citrus and danky dank resinous-pine notes.
