Before the tanks hummed and the taproom lights came up, there was a trail. Pure Project began, naturally, not in some polished boardroom of branding jargon and stainless certainty, but on a backpacking trip — two San Diego friends stomping through Colorado in 2013, talking beer, Costa Rica, local ingredients, hidden beaches, and what might happen if reverence and wanderlust opened a brewery together. The original dream bloomed in Manuel Antonio, then rerouted back to San Diego when jungle logistics proved less romantic than advertised, but the soul of the thing came home intact: seasonal ingredients, environmental devotion, a little Pura Vida in its bloodstream, and that quietly obsessive belief that details matter all the way from grain to glass.
That obsession is what makes Pure Project more than just another hop cathedral humming along the Southern California coast. Yes, they make gorgeous IPAs — the luminous haze, the citrus snap, the resin and tropical silk — but they also move with the calm confidence of a brewery that sees beer as agriculture, atmosphere, and ethics all at once. Since opening in 2016, Pure has grown into a multi-location San Diego presence with a deep bench of crisp lagers, West Coast stunners, murky fruit-fog beauties, barrel-aged curiosities, and wild ales that flirt with oak, funk, and patient old-world grace. This flight leans into the brighter side of that universe: one palate-cleansing pilsner, four hop-driven studies in sunshine, structure, and beautifully controlled excess.
Peaks & Pints Pure Project Beer Flight
Pure Project Brewing Rain
5.3% ABV | Pilsner | San Diego, California
A quiet reset — cool air through an open window, soft grain rising and disappearing into a clean, mineral edge, floral hops drifting in and out like something half-remembered. The texture carries a faint silk from the wheat before everything pulls tight and finishes dry, leaving the palate rinsed and ready, as if someone cleared the stage with a single, graceful gesture.
Pure Project Rock Hopper IPA
6.8% ABV | Murky IPA
Ripe nectarine slides into mango velvet, sweet orange oil catching the light, all of it lifted by a subtle Meyer lemon brightness that keeps the whole affair from slipping into sugary excess. A faint white-wine echo winds through the haze, giving shape to the softness, while the finish offers just enough grapefruit tension to keep things lively and slightly dangerous.
Pure Project Pure West IPA
6.3% ABV | West Coast IPA
Grapefruit zest arrives first, bright and unapologetic, followed by a hum of pine and resin that feels both classic and freshly tuned. Hints of apricot and lychee flicker at the edges, never lingering too long, before a firm, confident bitterness closes the loop, dry and bracing, like a shoreline wind that clears your head whether you asked for it or not.
Pure Project Second Break IPA
6.7% ABV | West Coast IPA
A sharper turn here — citrus peel, evergreen, a flash of lemon oil, all moving with a kind of brisk intention. The structure leans taut, almost athletic, bitterness stepping forward without apology while subtle tropical notes hum quietly in the background, adding dimension without softening the edges.
Pure Project Surreal Life IPA
8.5% ABV | Murky Double IPA
Then the dream sequence: mango, peach, tangerine drifting through a soft golden haze, a suggestion of coconut warmth lingering like sunlight on skin. The texture deepens, plush but not heavy, fruit layered upon fruit in slow motion, while bitterness barely whispers from the wings, letting the whole thing glow just a little longer than expected.
