Peaks and Pints Tacoma Sandwich Special: Chicken Caprese

Wednesday, June 11, 2025: As part of Peaks & Pints Chef Mike Parker’s summer menu, he created a Chicken Caprese sandwich, a burrata-powered beauty that piles sweet pea pesto, provolone, rosemary mayo, balsamic glaze, and tender chicken onto a toasted French roll. “I thought burrata would mesh well with the fresh ingredients without taking too much away from the stars,” says Chef Mike. “It’s a very mild cheese so that it won’t overpower the other flavors.”

PAIRING: Brasserie de Blaugies La Vermontoise

Brasserie de Blaugies is a small family-owned craft brewery located in Dour, Belgium. Founded in 1988, Blaugies creates unfiltered beers, refermented in bottles or casks. Stemming from a partnership with mythical Vermont brewery Hill Farmstead, La Vermontoise saison is made with malt, spelt, and American hops. It stands out with its substantial bitterness and a dry, subtly lemony finish. The beer cleanses the palate, matches the herbal complexity, and lifts the sandwich without overpowering it. It’s a textbook example of saison versatility—refreshing, complex, and food-friendly.
