Tuesday, June 10, 2025: The Peaks & Pints Kitchen created Tuesday’s sandwich special with pastrami, blue cheese, Caesar dressing, olives, onion, and tomato on French bread. Enjoy this bold, flavor-forward sandwich inside an air-conditioned craft beer bar, bottle shop, and restaurant in Tacoma’s Proctor District.

PAIRING: Fair Isle Brewing Salacia

Pastramian Empire layers savory pastrami with tangy Caesar dressing, briny olives, pungent blue cheese, crisp onions, and juicy tomatoes, all nestled in a crusty French bread loaf. It’s a rich, salty, and umami-packed creation that demands a beer with structure and finesse. Enter Salacia, a saison from Fair Isle Brewing, whose dry body, subtle funk, and citrusy spice make it the perfect pairing. The beer’s effervescence cuts through the fat of the pastrami and cheese, while its farmhouse complexity complements the sandwich’s briny and creamy elements without overpowering them. Together, the sandwich and Salacia create a balanced, elevated experience—rustic yet refined, punchy yet poised.

CLOUDBURST BREWING PEDESTRIAN AT BEST: “This is a modern pale ale brewed with mostly Citra and Motueka hops,” explains Cloudburst. “We think it’s neat because it’s like an IPA but with less alcohol, less bitterness, and more harmony between soft crackery malt character and lemon limey citrusy meets yellow peachy hop character. Why aren’t these more popular? WE WISH WE KNEW! Even Courtney Barnett wrote a song about them, and still – no buzz. She’s all like “you’ll love it, you’ll hate it, on the fence, it all depends. LUCKY ENVELOPE BREWING BLACK HEART: As part of their 10th Anniversary celebrations, co-founder Barry Chan collaborates with five of the incredible brewers who have spent time as his partners in beer. A collaboration with former Lucky Envelope now Georgetown brewer Kyle Jungck, Black Heart Dark Lager is the “broodier, malter-ego of our bright and crisp Barley Rae Jepsen collaboration,’ according to Chan, 5.2%, 16oz

MATCHLESS BREWING KING OF THE CHILL: “Bobby, do you know what it takes to brew the perfect beer for Summer? Asks Matchless. “Of course not, so let me tell ya, son. You’ve got to start with a good, clean base malt. Think of it as the foundation, just as propane is the foundation for any good barbecue. Next, ya gotta use hops and hopping accessories. Hops like Comet, Moutere & Triumph will produce bold notes of tangelo, grapefruit, and lime zest. What you end up with is a pale and exceptionally drinkable ale.
