September 2014, downtown Fargo — the prairie wind humming with grain dust and old Norse whispers — four unlikely conspirators finally unleashed their long-brewing plot. Scientist Mark Bjornstad, builder Darin Montplaisir, business wrangler Jesse Feigum, and engineer Mason Montplaisir had spent seven patient years steeped in homebrew alchemy, obsessive business scheming, Viking movie marathons, and brand-crafting so precise it could shave the beard off Odin himself. They christened their creation Drekker Brewing, a name stitched from “drekka” (to drink), “drykkr” (draft drink), and “drakkar” — the dragon-prowed warships that once prowled Europe’s waterways like beer-fueled leviathans. They began humbly: a 10-barrel system tucked in 5,200 square feet, pouring approachable, sessionable classics. Then came the upgrade to a four-vessel, 15-barrel beast and the first conquests: a cult-beloved red ale, IPAs across every possible haze index, and finally the glorious siege of smoothie sours — towering, fruit-stuffed ambassadors of the style. Synaptic Cleft is a big, soft double IPA built on a huge base of oats and wheat and hopped with Motueka, Moutere, Citra, and Belma for some massive citrus, stone fruit, and berry flavors with just the right amount of bitterness for balance.
