Some breweries chase trends. Others build laboratories and quietly start mapping the chemistry of flavor. Since opening on Denver’s East Colfax corridor in 2015, Cerebral Brewing has done the latter. Founded by former physical therapist Sean Buchan and partner Dan McGuire, the brewery was built around a deceptively simple idea: treat brewing like both art and experiment. The name itself hints at the approach — thoughtful, precise, curious. From the beginning the operation invested in an in-house quality lab and embraced a philosophy balancing technical rigor with creative instinct, allowing the brewhouse to move comfortably between sharply focused Czech lagers, saturated modern IPAs, and indulgent barrel-aged stouts. Over the past decade that approach has earned national attention and a loyal following among hop obsessives and lager purists alike, the beers landing somewhere between careful engineering and joyful expression.

Which makes Saturday’s Cerebral flight feel less like a random sampling and more like a guided tour through the brewery’s brain. The beer flight traces the arc of that restless curiosity — beginning with the quiet elegance of a Czech-inspired amber lager, drifting through plush modern haze, snapping bright with a classic West Coast IPA, then plunging into tropical double-dry-hopped territory before finishing deep in midnight with a coffee-laced imperial stout. It’s science and imagination sharing the same pint glass, each pour showing how precision and indulgence can coexist beautifully when curiosity runs the brewhouse.

Cerebral Podzimní

4.7% ABV | Dry-Hopped Czech Amber Lager | Denver, Colorado

Copper light glows through the glass as toasted bread crust and honeyed malt rise gently upward. A faint thread of caramelized grain hums beneath it all while herbal hops drift through the aroma like cool air sliding across autumn grass. Balance arrives effortlessly, crisp lager structure meeting quiet malt warmth while a subtle dry-hop lift brightens the edges. The finish leaves the palate refreshed and contemplative.

Cerebral Momentum Shift

6.2% ABV | Hazy IPA

A luminous orange haze carries aromas of honeydew melon, citrus candy, and a flicker of lime zest that seems to glow in the glass. Citra, Motueka, and Nelson Sauvin braid together in bright harmony, sending waves of tropical fruit and white-grape sparkle across a soft, pillowy body. The bitterness stays relaxed while the aromatics linger just long enough to keep the sip humming. What remains at the end is a gentle citrus shimmer, like sunlight dancing across the last ripples of a mountain lake.

Cerebral Direct Current

6.6% ABV | West Coast IPA 

The first impression is electric: lemon zest, tangerine oil, and a quick flash of yuzu lighting up the nose. A lean malt frame clears the runway so the hops can run clean and fast, sending bright citrus sparks across the palate before the bitterness snaps into tidy focus. Clarity and structure guide the experience, each sip crisp and invigorating. It finishes brisk and refreshing.

Cerebral From Far Below DDH DIPA

8.3% ABV | Double Dry-Hopped Hazy Double IPA 

From Far Below glows in the glass like sunset pulp, a double-dry-hopped haze built for slow admiration and unapologetic hop indulgence. Brewed in collaboration with Brujos Brewing, the beer dives headfirst into the tropical deep end, coaxing waves of mango nectar, lime candy, and ripe peach across a plush, pillowy body. Galaxy and Citra swirl with Southern Hemisphere flair, saturating the glass with fragrant hop oils while the bitterness remains soft and supportive. The finish lingers long and juicy, as if the beer itself has just surfaced from somewhere deliciously hidden beneath the hop fields.

Cerebral Peace Be The Journey

10.8% ABV | Imperial Coffee Stout 

Midnight pours thick and slow, carrying espresso perfume and deep chocolate richness that feels more café ritual than casual pint. Bright Kenyan coffee cuts through the darkness with roasted clarity while vanilla and caramel drift behind it like candlelight in a quiet room. The body moves plush and deliberate, mocha, toasted sugar, and gentle roast unfolding layer by layer. .
