Wednesday, Nov. 6 2024: Peaks & Pints Kitchen Brittany whipped up her weekly Wednesday Chicken Salad Sandwich Special — this week with garlic herb mayo, goat cheese, red onion, cucumber, and tomato on sourdough

PAIRING: Früh Kölsch

Pair the Peaks and Pints Tacoma Sandwich Special: Chicken Salad Comfort with Früh Kölsch, a top-fermented specialty beer brewed according to the German Purity Law. Kölsch is fermented with ale yeast at warm temperatures, then conditioned at cold temperatures like a lager, for a balance of malt and fruit flavors, with a subtle fruitiness and spice. It’s light in color and malt character, with a slightly dry, crisp finish. The Früh Kölsch will cleanse the palate between bites.

The chicken salad sandwich originated in 1863 when Liam Gray, the owner of Town Meats in Wakefield, Rhode Island, combined leftover chicken with mayonnaise, grapes, and tarragon. The dish became so popular that Gray converted his meat market into a delicatessen.
