Thiols are a family of sulfur-containing aroma compounds naturally found in hops, either as free aroma-active volatiles or as non-aroma-active precursors. They produce unique and potent characteristics of exotic tropical fruit. Several of the most popular varietals of the last decade, Cascade, Citra, Simcoe, Nelson, and Mosaic, include thiol precursors, compounds that can be transformed into thiols via biotransformation during fermentation, as well as free thiols, aroma active compounds that are soluble in beer. Phantasm is a powder derived from New Zealand Marlborough Sauvignon Blanc grapes, which are rich in thiol precursors that are known for creating aromas of citrus, guava, and passion fruit. Today, Peaks & Pints presents an in-house beer flight of beers brewed with Phantasm powder — a flight we’re calling Peaks and Pints Beer Flight: Phantasm Powder.

Silver City Phantasm IPA

6.2% ABV

On the cutting edge of innovation, Silver City Brewery’s tropical Phantasm IPA is fermented with specialty yeast that has been designed to release passionfruit and other thiol aromas. It is brewed with Phantasm powder, a crossover ingredient from the world of winemaking. Additionally featuring Alora hop, which offers white grape and peach aromas.

Anchorage Grief

8.4% ABV

Anchorage Brewing’s Grief hazy double IPA is fermented with Cosmic Punch yeast and double dry hopped with Superdelic hops and Phantasm powder for notes of tropical fruit, white grape, lychee, and berries.

Great Notion 8 Ball Jacket

9.2% ABV

For their eight birthday, Great Notion brewed something special that distills a few of their favorite brewing techniques and ingredients into one beer: 8 Ball Jacket double dry hopped hazy double IPA with Phantasm. Brewed with flaked oats and wheat to keep this thing soft, and a fat addition of Citra went into the whirlpool. Two early-stage dry hops were done with double the amount of hops they would normally use in hazy IPA. This helps express maximum tropical aromatics that Citra, Strata, and Nectaron have to offer while the Phantasm powder takes it to a higher level.

Eredita Over Zealous

9% ABV

Eredita Brewing’s Over Zealous is a double IPA brewed with Nelson Sauvin and Southern Cross hops sourced from Freestyle Hops in New Zealand, plus Phantasm powder, for resins, sweetness, lime zest and dang smooth for the ABV.
