Founded in August 2020 by CEO Caitlin Braam and crafted by Head Cidermaker Monique Tribble, Yonder Cider makes savory, subtly sweet and high ABV ciders in Wenatchee with a taproom in Seattle’s Ballard neighborhood, which is shared with Bale Breaker Brewing from the Yakima Valley, and Yonder East, a taproom in Cashmere, Washington, which opened last summer. As the latest addition to Side Street in Cashmere, the taproom is set in a 3,900 square foot mid-century modern-inspired basement, with an additional 2,500 square foot outdoor patio. Crafted using a blend of bittersweet cider apples and juicy dessert apples, Yonder ciders are hardly simple, and never straightforward, but you can always count on them being interesting, many fashioned after Braam’s favorite cocktails. Since Yonder just released their annual Phinneywood cider, Peaks & Pints presents another flight of Yonder Cider that we’re calling Monday Yonder Cider Flight at Peaks & Pints.
Monday Yonder Cider Flight at Peaks & Pints
Yonder Vantage
6.5% ABV
Juicy, crisp, and beautifully balanced, Vantage semi-dry cider offers bold tones of peaches and strawberries that compete with the nuance of spice. It brings the best out of various red-fleshed apples, plus Fuji, Honeycrisp, Golden Russet, and Dabinett traditional cider apples.
Yonder Palisades
6.5% ABV
Palisades cider is a blend of Fuji, Honeycrisp, Roxbury Russet, Dabinett, various red-fleshed apples, and Pacific Northwest blackberries, all supported by an herbal hint of sage. The semi-sweet cider pours a clear ruby red with heavy carbonation. Moderate to strong berry hits the nose, followed by a strong tart berry flavor with a hint of sage in the finish.
Yonder Mazama
6.9% ABV
Inspired by a vermouth enjoyed at Scribe Winery, one of Caitlin Braam’s favorite California wineries, Mazama combines bright botanicals with orange peel and a subtle pear finish for a cider. With their base apple blend, Yonder adds Winesap and Marie Menard apples to enhance the citrusy aroma and give a pop to the finish of this springtime seasonal.
Yonder Phinneywood
6.9% ABV
Yonder founder Caitlin Braam loves cocktails. She’ll hand over a cocktail recipe to her head cidermaker, Monique Tribble, to transform the ingredients into a savory cider. A collaboration with Ken’s Market in Seattle, this strawberry basil lemonade cocktail-like cider hits the tongue with bright lemon and a hint of strawberry with subtle notes of basil.
Yonder Cashmere
6.9% ABV
Yonder’s winter seasonal Cashmere is inspired by one of Yonder founder Caitlin Braam’s favorite cocktails, the Negroni. Made with tart cranberry, dark cherry, and a hint of bitter orange, Cashmere hits the nose with orange peel and berry, pairing beautifully with notes from one of her favorite cider apples, Ashmead’s Kernel.
