September 2014, downtown Fargo — the air sharp with prairie wind and faint whispers of mead-fueled sagas — four unlikely conspirators threw open the gates to Drekker Brewing. Scientist Mark Bjornstad, builder Darin Montplaisir, business wrangler Jesse Feigum, and engineer Mason Montplaisir had spent seven years brewing in garages, sketching business plans on napkins, bingeing Viking epics, and honing a brand that could outshine a fjord at sunrise. The name itself is a mash of Nordic incantations — “drekka” (to drink), “drykkr” (draft drink), and “drakkar” (dragon-prowed warships that once terrorized European waterways) — a battle flag in liquid form. They launched with a humble 10-barrel system in a 5,200-square-foot lair, pouring friendly, sessionable classics before upgrading to a four-vessel 15-barrel beast. The first trophies: a cult-loved red ale, IPAs spanning every possible haze index, and eventually a full-scale invasion of smoothie sours so decadent they became the style’s unofficial ambassadors — pineapple, guava, passionfruit fever dreams, and even a PB&J nostalgia trip in a glass.
