A four-day cooler inventory is not usually where summer begins.

Usually, it begins with farmers’ market signs, roadside stands, and someone in Western Washington declaring, with suspicious confidence, that peaches are finally good. But this week, summer announced itself from behind the cooler door, where we discovered more Onibi Bakeneko Peach Pale Ale than expected and took it as a sign from the fruit-beer gods, the refrigeration spirits, or possibly a shape-shifting Japanese cat with excellent timing.

So yes, we are pouring a Peach Beer Flight before local peaches fully arrive, because beer has always been comfortable bending the calendar. Peach is especially good at this trick. It can brighten a pale ale, deepen a farmhouse sour, soften wild acidity, turn a smoothie beer into dessert, or slip into barrels and come out tasting like orchard sunlight learned how to speak oak.
