Wet Coast Brewing will\, thankfully\, have cans of their Whisper Sister Hazy Pale\, Moving Day IPA and Wet Coast Cream Ale for sale in the Peaks and Pints Speakeasy in Tacoma’s Proctor District. \nIndeed. The Gig Harbor brewery — named after the Prohibition days where citizens voted wet or dry — has finally released can versions of their delicious craft beer\, and Peaks and Pints will host the Can-Can release party\, beginning at 6 p.m. Thursday\, May 30. \nWest Pierce Fire and Rescue firefighters Bryan Copeland and Aaron Johnson are the brewers and co-owners behind the business\, along with their wives Molly Copeland and April Johnson. They started planning their brewery for years\, but didn’t get serious until 2012. They opened in Gig Harbor in 2015 on a 3.5-barrel brewing system\, with three 7-barrel bright tanks and four 7-barrel fermenters\, which has been replaced by a much larger system. \nThe love affair with the Prohibition era is particularly evident at Wet Coast Brewing. In the 1932 presidential election\, King\, Pierce\, and Spokane counties voted “wet\,” meaning those citizens voted for Democrat Franklin D. Roosevelt and his desire to bring back the drinkies\, instead of Republican Pres. Herbert Hoover’s desire to keep “the noble experiment\,” Prohibition. In addition\, Wet Coast beers give a nod to Prohibition days\, for instance “Hi Jack!” was used in speakeasies as a code word for law enforcement. \nAs you enjoy music from the Prohibition years\, you may sip Wet Coast treasure tapped on our Western red cedar tap log\, or have a bartender pop open West Coast cans. … \nWHISPER SISTER HAZY PALE: An easy drinking pale brewed with a hefty dose of oats. Vermont IPA yeast brings the haze and bolsters the tropical and citrus notes of El Dorado and Falconer’s Flight hops. 5.5% \nMOVING DAY IPA: Packed with resinous/citrus/tropical flavors and aromas thanks to four different hop varieties\, this IPA is balanced by its solid malt bill featuring Munich and Crystal malts. 6.4% \nWET COAST CREAM ALE: This cream ale is smooth on the palate thanks to a malt bill featuring flaked corn and Honey malt. Inspired\, we’ll tap a few beers that have spent some time in spent bourbon barrels\, too. \nWhy? Because barrel aging is totally a thing. Well\, it has been for centuries. Before industrialization\, Europeans fermented beer in wood\, stored and shipped in wood\, and poured directly from wood. Beer spoiled often. Life was hard. By the mid-20th century\, most breweries had happily traded their temperamental wooden barrels for the reliability and convenience of metal tanks. Beer spoiled less. Life was decent. However\, brewers and cidermakers have long known that wood-aging can add flavor and depth to beer\, especially if said barrel previously contained bourbon. The result is a beer and cider more complex than most\, as additional flavors bleed from inside the staves — deeper woody notes that play to the liquid’s base and an extended taste that finishes with a nip of booze. \nThis year\, Tieton’s popular Bourbon Barrel Peach cider (6.9%) was aged in previously used Dry Fly bourbon barrels. Aging in bourbon barrels gives the cider deep\, rich notes of vanilla and spice. DESCRIPTION:Two Beers Climb For A Cause Benefit\nIn July 2019\, Two Beers Brewing and Seattle Cider Co. are sending eight of their staff to Mount Rainier’s summit in order to raise money for Washington’s National Park Fund\, or WNPF\, the official philanthropic partner of Mount Rainier\, North Cascades and Olympic National Parks. The funds raised by WNPF help fund 50-75 projects annually in these parks\, which the staffs at Two Beers and Seattle Cider visit\, climb and bike monthly\, if not weekly. \nPeaks and Pints will host a fundraiser for that WNPF Climb For A Cause team at 6 p.m. Thursday\, June 6. In addition to games\, raffle prizes\, beer and cider\, donations will be accepted\, as well as Peaks and Pints contributing portions of draft sales that night. \nBeginning their partnership in 2016\, Two Beers Brewing has been raising funds for WNPF through sales of their flagship brew\, Wonderland Trail IPA\, and a series of fundraising events. In 2018 Two Beers raised $25\,000 for WNPF\, surpassing their $20\,000 goal\, and sent a team of eight to summit Mount Rainier with the help of International Mountain Guides (IMG). On summit day in 2018\, due to dangerous avalanche conditions\, the Two Beers Climb for a Cause team watched the sunrise from Disappointment Cleaver\, 12\,300-foot elevation and only 2\,000 feet shy of the summit. Hungry for a summit this year\, Two Beers’ Climb Team captain Kristen Oliphant calls her journey\, “the greatest physical and mental challenge I could endure. DESCRIPTION:Fort George 3-Way IPA 2019 South Sound Release Party\nWhile summer days are great for lounging\, it’s the hot summer nights that will truly make memories. And nothing heats things up faster than a Fort George Brewery’s 3-Way release party. Peaks and Pints has been selected to host the Astoria brewery’s annual IPA collaboration release party for the South Sound Thursday\, June 20. How do we present such a coveted IPA to the region? Gotta have more washboard. \nTacoma’s punkgrass band The Rusty Cleavers will rattle the 3-Way pints and cans live during the release party at Peaks and Pints. \nFort George Brewery has brewed 3-Way IPA since 2013\, featuring two different craft brewery collaborators every year. This year\, Cloudburst Brewing and Ruse Brewing shared ideas and techniques with Fort George owner Chris Nemlowill\, then began releasing beta small batches in November 2018. The initial idea was to brew something in between a New England style hazy and a West Coast IPA — unfiltered with pilsner malt\, red wheat\, golden promise\, plus ample discussions about pH levels in the whirlpool and the amounts of each hop addition. Three hops were initially chosen — Cashmere\, Idaho 7\, and Citra. However\, they also hatched a plan to try out different dominant dry hops in each batch\, while also making minor adjustments to the rest of the recipe. \nYou’ll notice 3-Way IPA combines all of the fruit-forwardness of a hazy\, but with that classic touch of bitterness from a West Coast IPA as The Rusty Cleavers perform “Laundromat Boogie.” You’ll toast the band’s “Hit on Heaven” song as you enjoy the bright\, citrus fruit bomb that doesn’t finish too heavy or sweet. You’ll scream\, “THIS IPA DOESN’T HOLD BACK ON THE HOPS!” as the band launches into “Whiskey You’re the Devil.” \nBut the fun doesn’t stop there. You’ll return to Peaks and Pints down the road (The Rusty Cleavers cranking through your Airbuds) as Fort George will move past the first batches heavily dry hopped with Citra (notes of orange juice\, grapefruit zest\, and bitter lemon peel) and beginning release new batches with supporting hops taking a starring dry-hop role. We Americans ate our cheese straight from cellophane blister packs; we didn’t have time to coddle fragile little bundles wrapped in salt-washed rinds or protected in ash. Today\, cheese plates and pairing are everywhere\, including Peaks and Pints craft beer bar\, bottle shop and restaurant in Tacoma’s Proctor District. In addition to our daily charcuterie plate\, we present Peaks and Pints de Belgian Beerloo: Cheese Pairing at 6 p.m. Wednesday\, July 17. \nThe Belgian beer and cheese pairing is part of our de Belgian Beerloo\, a weeklong celebration of Belgian beer Tuesday\, July 16-Sunday\, July 21\, which is Belgian National Day. \nMerchant du Vin — the Seattle-based specialty beer importer representing Lindemans\, Brasserie du Bocq\, Westmalle Trappist and Trappistes Rochefort\, to name a few — will provide the Belgian beers for Courtney C. Johnson — a cheesemonger and certified curd nerd living in the Seattle area — to pair with local artisanal cheese. Johnson\, a PhD with an ACS CCP\, owns The PhCheese\, a blog dedicated to expanding general knowledge and appreciation for all things cheese. Peaks and Pints hosted the first two collaborations — Brooklyn Brewery in April and Firestone Walker in May. We’re opening the pod bay door again for Ecliptic’s third Cosmic Collaborator\, Breakside Brewery\, July 18. \nEcliptic Brewing owner and brewmaster\, John Harris\, worked with Breakside’s brewmaster\, Ben Edmunds\, to create the Nectarine Sour Ale (8.2%) brewed with pale and Munich malts\, wheat and oats\, but what provides its unique\, fruity flavor — pureed and fresh nectarines. Following these two “waves\,” the third wave brought about heightened interest in quality and artisanship that can be compared to craft beer’s meteoric rise. Professionals today carefully roast and brew specialty beans to draw out the best flavor. As part of Tacoma Beer Week\, Bluebeard Coffee\, Kulshan Brewing\, Peaks and Pints and professionals in the artisan and craft beer communities will offer an educational approach about the nuances of coffee and beer and what happens when these nuances merge into a new product thus a new experience with a new product in the Peaks and Pints Tacoma Beer Week: Coffee Beer Chat at 6 p.m. Friday\, Aug. 16. The events will be also be a fundraiser for healthy waters (dear to both coffee and beer industries) by donating certain amount of the proceeds of this event to Tacoma’s Citizens for a Healthy Bay. \n“It will be the perfect pint of coffee beer\,” laughs Kulshan Brewing sales Executive Katie Johnson. “Yes\, Peaks and Pints will tap many coffee beers\, including the coffee lager Bluebeard and Kulshan collaborated on\, which is enough of a reason to attend this Tacoma Beer Week event. But\, when we add an educational element with Bluebeard roasters\, Kulshan Head Brewer Wesley Finger\, BJCP judges\, and high level Cicerones — plus raising money to keep Commencement Bay clean — well that’s a hug in a mug\, er\, pint.” \nPeaks and Pints Tacoma Beer Week: Coffee Beer Chat pours two ways at 6 p.m. Friday\, Aug. 16. When Peaks and Pints Pacific Northwest Cider Invitational returns to anchor Tacoma Beer Week Sunday\, Aug. 18\, it will brim with more than 20 craft ciders and cider cocktails whose flavor profiles extend from barnyard funk to pleasantly astringent. Representing Washington\, Oregon and Idaho\, the Pacific Northwest Cider Invitational 2019 showcases regional variations and plucky endeavors. \nUltimately\, cider is a regional product\, and not every part of the country has access to the best varieties of apples to make it. Even if a grower planted an orchard today\, it would be at least seven years before those trees produced their first fruit. Not only are Washington and Oregon two of the country’s biggest states for beer and wine\, but the Pacific Northwest is leading the way with craft ciders\, too.
