DESCRIPTION:Two Beers Brewing Co. and Seattle Cider Company will be the guest hosts for the Peaks and Pints Lodge Meeting at 6 p.m. Thursday\, Nov. 10. Drinking for Conservation will be in the house raising money for Cascades Pika Watch\, an organization that studies Columbia Gorge pikas’ resilience in their ecosystems in the face of a warming planet. \nTWO BEERS BREWING CO.\nIn 2005\, Joel VandenBrink found himself in a disagreement with a friend\, so they headed to a local pub to talk it through. After the second pint disappeared\, the two friends had an honest conversation. Engineering grad and outdoorsman VandenBrink had just moved to Seattle from Holland. After a homebrew starter kit and an inspirational tour of New Belgium Brewing\, VandenBrink founded Two Beers Brewing Co. in a 170 square foot ActivSpace facility along Highway 99 in Seattle’s Fremont neighborhood in August 2007. VandenBrink engineered his beer recipes on two burners and two 27-gallon fermenters. In June 2008\, VandenBrink delivered his first keg\, 20:20 Blonde. \nThe rest\, as they say\, is history. \nPEAKS AND PINTS LODGE MEETING\nEric Willard\, director of Operation at Seattle Cider Company and Two Beers Brewing Company\, joined the Two Beers brewers in brewing a special beer for the Two Beers Peaks and Pints Pals night Nov. 10. “We added a crazy amount of spruce tips to our EVO IPA recipe\,” says Willard. “We were a bit worried that it might have been too much\, but I think I turned out well.” Indeed\, as it seems that they bought the local Christmas tree lot right out\, chopped them all up\, and let them steep throughout the whole bloody brew cycle. It smells of spruce\, that much is very true\, all green and acrid and compelling\, with a bit of appropriate dirty earthiness\, and maybe a suggestion of some grainy and mildly caramelized malt. The EVO IPA alone hits the nose with pinecones and tropical fruit\, as it’s hopped with Yakima Valley Simcoe\, Amarillo and Centennial\, then aggressively dry-hopped with Simcoe and Columbus. The taste is replete with resinous spruce tree bitterness\, tropical fruit and a slight toffee finish. It finishes dry\, earthy\, spruce needle-y\, and faintly grainy. \nThe other Two Beers craft brews pouring from the Peaks and Pints’ Western red cedar tap log will be the Overhang Imperial Porter AND Jive Espresso Stout as well as a Seattle Cider red wine barrel aged Berry. \nDRINKING FOR CONSERVATION\nTacoma’s Drinking for Conservation is an organized committee of dedicated zoo staff and volunteers from the Point Defiance American Association of Zoo Keepers Chapter.  Dedicated to professional animal care\, the vision of the AAZK is to provide resources for zookeepers and animal care professionals. Every month\, Drinking for Conservation partners with a Tacoma drinking establishment to raise money for a specific endangered species or environmental situation. For November\, they will be hanging with Two Beers Brewing Co. at Peaks and Pints Thursday\, Nov. 10\, raising money for Cascade Pika Watch’s effort to study the cute\, little pika. Pika are considered to be a sensitive indicator of climate change due to their inability to survive long periods of warm summer weather. The pair grew up on opposite sides of the Kitsap Peninsula — Runion is a graduate of Gig Harbor High School and Guterson of Bainbridge Island High — and met in the middle\, at Silver City Brewery. Runion\, who has a business degree in entrepreneurship\, was doing an internship while Guterson was a production brewer at the time\, back when Silver City’s production facility sat in Silverdale. What binds them is their passion for craft beer — and a shared drive to build a successful business. The elegant craft beer is brewed and aged in the same tradition as Flanders Red and Oud Bruin\, brewed with Pilsner malt and highlights delicate flavors of French Oak after 18 months in twice-used Pinot Noir barrels. The Oregon Hood River Gorge-based brewery finally releases it sown Dry Cider (6.7% ABV) blending freshly harvested heirloom apples from Double Mountain Orchards and Hood River Newtowns\, Braeburns\, and Hanners for old world complexity. Double Mountain gave it plenty of time to dry out and develop the aromas of juicy pear\, lychee\, green fruit\, and chamomile.  It finishes tart\, crisp\, dry and quenching. \nPeaks and Pints will host Double Mountain owner Matt Swihart and the South Sound release party for Dry Cider at 6 p.m. Monday\, Dec. 5. DESCRIPTION:How would craft beer have evolved in America if we had centuries-old brewing traditions such as Germany and Bavaria? Brewer and co-founder of O-Town Brewing Bryan Trunnell focuses his creativity on creating beers that could have existed in this alternate brewing history. He brews German and Bavarian inspired brews … with one foot planted in the Pacific Northwest. The resulting beers blur style guidelines in exciting ways\, such as Brewtarsky\, a German Pale ale brewed with traditional German malts and dry-hopped with Northwest hops\, or pre-prohibition inspired Northwest grunge take on German ale standard Kölsch Köbain. \nTrunnell is one-fourth of O-Town Brewing in Olympia\, Washington\, which will be the guest brewery at the Peaks and Pints Lodge Meeting at 6 p.m.\, Thursday\, Jan. 5. \nTrunnell and Erik Heimann owned Kastellan Brauerie in Lacey several years ago. They brewed Northern European style lagers and ales with German and Belgian malts and grains. After Kastellan closed Trunnell happened upon S & M Brewing homebrewers Matt Smith and Neil Meyer\, who were brewing another brewery concept over pizza and the former Apollo’s Pizza & Pasta in Olympia. O-Town brewing was off and running. Brewer Jason Stenzel is the fourth owner. \n“‘Better beer\, more of it” is our motto\,” says Meyer. “We strive to make the best\, traditional back-boned beer with a fun\, interesting twist.” They’re talking Sails ‘n’ Gunpowder Caribbean Ale\, a strong ale made with spices\, ingredients and inspirations from the West Indies trade routes and its offshoot Winter Sails infused with raw sugar\, molasses\, vanilla\, coconut\, cinnamon\, cocoa nibs\, nutmeg\, cloves\, allspice\, and then aged on Caribbean rum-soaked oak staves. DESCRIPTION:Off Trail with Deschutes Brewery begins with a bearded storyteller telling a tale about Gary Fish opening a brewpub in Bend\, Oregon\, in 1988\, naming it Deschutes Brewery. There are references to the 10 straight batches of beer that went bad in the first year\, original brewmaster John Harris’ brewing style\, and how a buried keg of beer in the snow became Jubelale. From there\, the plot follows a predictable path: Deschutes can’t keep up with demand\, grows\, grows again and two feuding families fight over the brewery while forbidden love blossoms\, although we’re fact checking the last two scenes. All of this\, rounded out with a lot of tumbling\, and the occasional pyrotechnic. \nDeschutes still remains family and employee owned\, known for brewing a diverse line-up of award winning beers including its flagship beers Black Butte Porter and Mirror Pond Pale Ale — named after beautiful\, natural places in Bend. \nOff Trail with Deschutes Brewery will hit Peaks and Pints bottle shop\, taproom and eatery at 6 p.m.\, Friday\, Jan. 20. Deschutes craft beers will flow from our Western red cedar tap tree\, including a 2015 The Abyss and the new Pacific Wonderland Lager. Deschutes Brewery Sales Executive Norm Cartwright will emcee Off Trail with Deschutes Brewery. Cartwright will raffle off cool camping equipment with the money benefiting Green Tacoma Partnership. \nThe Beer\nCartwright will bust through the Peaks and Pints door Jan. 20 with Deschutes craft beers. He’s still whittling down the final craft line-up from a field of 87 beers\, but Deschutes’ new Pacific Wonderland Lager\, Red Chair Northwest Pale Ale and a keg of 2015 The Abyss Imperial Stout will be on tap. \nDeschutes Brewery always believed the best way to respect tradition is to brew the unexpected. So when the Bend\, Oregon\, brewery set out to create a sessionable lager befitting of the Pacific Northwest\, their sense of exploration led them to the dry-hopped Pacific Wonderland Lager. Citrusy Tettnang Mandarina hops combine with the crisp\, bright character of a traditional lager to deliver a beer that is truly refreshing\, and undoubtedly worth sharing. \nThe 2015 The Abyss Imperial Stout — brewed with licorice and molasses and aged in French oak and bourbon barrels — will pour into a snifter\, allowing the aroma of bourbon\, coffee and wood to lift you off our aged fir flooring as if in a séance. After aging for 10 months in our cellar (read: 7 Seas Brewing Tacoma plant’s basement) the flavors of molasses-tinged sweetness\, coffee\, dark chocolate\, light cherries\, cigar box\, roasted malts\, toast\, currants and vanilla meld and fuse into an entirely different pleasure. \nGreen Tacoma Partnership\nFormed in 2005\, the Green Tacoma Partnership is a public-private venture between the city of Tacoma\, Metro Parks Tacoma\, Forterra\, other nonprofits\, businesses and community members. According to Green Tacoma partnership’s website\, “The Partnership works to engage the Tacoma community in the restoration and maintenance of viable\, healthy green spaces by connecting stewardship groups\, providing resources and trainings and organizing public outreach. For Tacoma’s residents\, working together for a common cause in a local green space is a great way to build community. A community of connected\, educated and engaged volunteers is the backbone of a strong\, healthy and beautiful Green Tacoma.” \nThe Raffle\nDeschutes is sponsoring a $1 raffle with 100 percent of the funds going toward Green Tacoma Partnership. You have been called the “mother’s milk” of beer. Your style has evolved over more than a century\, and much of your character comes from the addition of milk sugar\, aka lactose. You can hear the wiseasses remark\, “I asked for a beer\, not a cup of coffee with half a creamer cup and three packets of sugar.” \nEgad.
