Peaks and Pints Pilot Program: Omnipollo on the Fly

Share

Swedes Karl Grandin and Henok Fentie are fancy. Their beer is fancy, thanks to homebrewer turn mad scientist Fentie. Their label art is fancy, thanks to visual artist Grandin. They don’t brew much in Sweden, but they travel to fancy lands to brew their creative brews, many times with collaborating breweries. Since they founded Omnipollo in 2011, they keep a constantly curious, razor-sharp and fancy approach to everything they do. Today, we look at what fancy brewers can do in our to-go beer flight, Peaks and Pints Pilot Program: Omnipollo on the Fly. Peaks and Pints Pilot Program: Omnipollo on

Peaks and Pints Pilot Program: Brown Ales On the Fly

Share

Let’s address the obvious: even though the brown ale is named for its color, things aren’t quite that simple. To begin with, the hues of this commonly misunderstood style can actually range anywhere from dark copper or amber to deep brown or sometimes ruby. The term itself was first coined by London brewers and referred to a whole family of classic British varieties, such as their mild ale in the early 18th century. There are really two types of brown ales nowadays — the more traditional British brown and its Americanized cousin. British browns can be dark, rich and nutty,

But, start slowly. Maybe do only one event in today’s 6-Pack of Things To Do and don’t spit on the sidewalk. Or, buy today’s beer flight and read a paragraph. Or, cheer a Tacoma Runner on as she or he runs by then read about yaks. Cheers! TACOMA LIGHT TRAIL: More than

Peaks and Pints Pilot Program: Russian Imperial Stout On the Fly

Share

Consider the Russian imperial stout. What makes it so imperial? Why has its legacy lasted so long, is so vital to the craft beer movement? Sure, it’s the son of porter, the king of beers in London during the 18th and 19th centuries. But, your father had nothing to do with your imperial ways. There are tales of Peter the Great, the Russian Tsar who traveled to England in 1689 and said to have fallen in love with strong British porter, which is weird since the style didn’t truly exist for another 30-plus years. Whatever. Peter the Great likely did

Peaks and Pints Monday Cider Flight: Boozy Ciders

Share

In 1982, Pommeau went legit. Up to that point, the beverage, officially classified as a mistelle, was a well-guarded secret among French farmers who produced it and wasn’t legally available to the public market. The farmers would use a system called mutage, a process in alcohol production that slows fermentation, on their fruitiest and tastiest apple juice. Apple brandy, known as Calvados in the Normandy region, was added to the juice to prevent it from losing its flavor. It’s then aged for a minimum of 18 months before being bottled as a Pommeau. The ratio is approximately two-parts of juice

Two years later, he approached Jack Schropp with the possibility about starting a microbrewery in Washington state. Over the next nine months the first batches of the African Amber and Pale Ale were rolled out. After much success with the Amber and the Pale Ale, Mac & Jack’s Brewing Company finalized their African Amber, Blackcat Porter and Serengeti Wheat (their hefeweizen beer). Peaks and Pints Pilot Program: Varietal Beer On The Fly

Share

If variety is the spice of life, then today’s Peaks & Pints to-go beer flight isn’t going to be very spicy. It IS damn tasty, though. Chris Baum, John Cope, Chad Roberts, David Paulson, and Karl Vanevenhoven opened Varietal Beer Co. in April 2018 in the Port of Sunnyside between Yakima and the Tri-Cities in Eastern Washington. The ownership all had a variety of dreams and life goals, but their Venn diagram centered on owning a brewery in the Yakima Valley. After earning the Enterprise Challenge held annually by the Yakima County Development Association and the Kittitas County Chamber of

Peaks and Pints Pilot Program: Vanilla Beer On The Fly

Share

Consider the vanilla bean. The Aztecs did. In addition to inventing long words ending in “atl” and awesome mythology, they had the patience to figure out how to cultivate vanilla — a particularly difficult flavor to come by. The pods are the fruit of an orchid plant (Vanilla planifolia), and they have to be cured and fermented over the course of about six months. If that weren’t involved enough, the high-maintenance orchid itself has to be pollinated by hand. Mexico continues to be a major producer, but bourbon vanilla pods from Madagascar are considered to be the Chanel No. 5

Peaks and Pints Pilot program: New IPA Year’s Eve On The Fly

Ah, the sweet artificiality of the New Year — the reassurance of a clean calendar, of resolutions for self-improvement. And then you pick up the newspaper, and that pure artifice of the change of year, that vagarious demarcation of another arbitrary moment, is rendered meaningless by the inexorably continuing chains of events that know no boundaries defined by pages in a calendar. It’s no wonder revelers seem to work so hard trying to have a good time as the countdowns begin. Just like Larry Hagman of Dallas, the Dudley Moore of Arthur and Ray Miland of The Lost Weekend, most

In the realm of desserts, pie is about as humble as it gets. Peaks & Pints has coconut cream pie on the brain. It’s filled with down-home goodness with a hand-crimped crust and a thick layer of custard amped up with shredded coconut for a more intense flavor. Peaks and Pints doesn’t serve pie, but we do serve many coconut-flavored craft beers. We gathered a few for today’s to-go beer flight,

Peaks and Pints Pilot Program: Barleywines On the Fly

Share

Despite its name, the barleywine is indeed a beer but at wine strength — ranging as low as 7-percent alcohol by volume in British versions and upward of 15 percent in American interpretations. Despite its name, barleywines aren’t made with tons of specialty grains, as one might assume. Historically, barleywines are brewed with pale malt, the same malts used for pale ales. Brewers achieve that rich caramel flavor that’s expected in barleywines by extending the length of the boil, which caramelizes the flavors and imparts that deep color. Yeast and hops vary between English-style and American-style barleywines, but either way,

Peaks and Pints Pilot Program: Boxing Day

Share

Today is Dec. 26 — what Brits call Boxing Day. Sure, after Christmas you might want to strap on gloves and settle those unresolved familial scores, but Boxing Day isn’t about pugilism. And it has nothing to do with boxing up decorations or gifts you wish you didn’t get. Instead, the national holiday harks back to a bygone era like powdered wigs and pagers. Back in the days of the Empire, British citizens were split into hierarchies divided by arbitrary lines such as accent and lineage. Think Downton Abbey, in which the bottom floor of a huge house split two
